Dosas
Ingredients

900g/2 lb long-grain rice,
soaked overnight
-
225g/8 oz grated (shredded)
coconut
-
4 green chilies, chopped
-
1cm/1/2 in ginger root, grated
-
4 onions, sliced
-
30ml/2 tbsp oil
-
15ml/1 tbsp chopped fresh
coriander (cilantro)
-
5ml/1 tsp chopped fresh curry
leaves
-
salt
-
30ml/2 tbsp ghee
Method:
-
Drain and wash the rice then
grind it to a paste with the coconut, chilies and
ginger.

Fry the onions in a little oil until soft
then add to the rice with the coriander and curry
leaves. Season with salt.

Heat a little oil at a
time and cook tablespoonfuls of the batter to make
pancakes.

Cook until lightly browned on the
underside then flip over, add a little ghee to the
pan and fry until browned.
