Snacks Recipes - Coconut Dosas

Ingredients

  • 900g/2 lb long-grain rice, soaked overnight

  • 225g/8 oz grated (shredded) coconut

  • 4 green chilies, chopped

  • 1cm/1/2 in ginger root, grated

  • 4 onions, sliced

  • 30ml/2 tbsp oil

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 5ml/1 tsp chopped fresh curry leaves

  • salt

  • 30ml/2 tbsp ghee


Method:

  1. Drain and wash the rice then grind it to a paste with the coconut, chilies and ginger.

  2. Fry the onions in a little oil until soft then add to the rice with the coriander and curry leaves. Season with salt.

  3. Heat a little oil at a time and cook tablespoonfuls of the batter to make pancakes.

  4. Cook until lightly browned on the underside then flip over, add a little ghee to the pan and fry until browned.
