Corn Pakoras
Ingredients

150g/5 oz sweet corn kernels
-
400ml/14 fl oz water
-
2 sliced bread
-
150g/5 oz mashed potatoes
-
50g/2 oz raisins
-
45ml/3 tbsp chopped fresh
coriander (cilantro)
-
15ml/1 tbsp lemon juices
-
5ml/1 tsp garam masala
-
5ml/1 tsp ground cumin
-
5ml/1 tsp ground red chili
-
1 small green chili, chopped
-
salt to taste

oil for frying
Method:

Place the corn and water in a
pan, bring to the boil and cook for about 3 minutes
until tender. Drain well. Dip the bread slices in
water for 30 seconds then squeeze out all the water
with the palms of your hands.

Place the bread in a
bowl with the cooked corn and the remaining
ingredients. Mix thoroughly then divide into 12
equal portions.

Put a few drops of oil on the
palm of your hand. Take one portions of the corn
mixture and roll it into a smooth round shape.

Continue with the remaining pakoras while you heat
the oil over a medium heat. Gently slip 6 pakoras
into the hot oil and fry until golden brown on all
sides, turning a few times while cooking. Serve hot
with chutney and barfi at tea.
