Batata Wada
Ingredients

450g/1 lb mashed potatoes
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

30ml/2 tbsp lemon juice
-
15ml/1 tbsp dried pomegranate
seed

2.5ml/1/2 tsp garam masala
-
2.5ml/1/2 tsp ground red chili
-
2.5ml/1/2 tsp ground roasted
cumin
-
2.5ml/1 in ginger root, finely
chopped
-
1 small green chili, finely
chopped
-
salt
Batter
-
50g/2 oz gram flour
-
5ml/1 tsp oil
-
1.5ml/1/4 tsp garam masala
-
1.5ml/1/4 tsp ground red chili
-
salt
-
75ml/5 tbsp lukewarm water
-
oil for deep-frying
Method:
-
Place the mashed potatoes in a
bowl and mix in the coriander, lemon juice,
pomegranate seeds. garam masala, chili, cumin,
ginger, green chili and salt.

Divide the mixture
into 12 equal portions and shape into balls. Place
the gram flour in a bowl and mix in the oil, garam
masala, chili and salt.

Gradually work in the water to
make a smooth, runny batter. Heat the oil in a
deep-frying pan (skillet) over a medium heat.

Dip
the potato balls in the batter until completely
covered. Fry a few at a time in the hot oil until
golden brown on all sides, turning occasionally.
Serve hot with chutney and barfi at tea.
