Snacks Recipes - Jaggery Dosas

Ingredients

  • 100g/4 oz jaggery

  • 250ml/8 fl oz water

  • 225g/8 oz whole wheat flour

  • 100g/4 oz rice flour

  • oil for frying


Method:

  1. Heat the jaggery and water in a heavy-based pan until blended. Strain and leave to cool. Add the jaggery syrup to the flours to make a batter of pouring consistency, adding a little water if necessary.

  2. Heat a heavy-based pan and smear with oil. Pour a ladleful of batter into the pan and spread to a 15cm/6 in circle.

  3. Pour a spoonful of oil around the edges and cook for about 2 minutes until each side is golden. Serve hot with coconut chutney.
