Masala Vadas
Ingredients

75g/3 oz red lentils
-
75g/3 oz split black beans
-
75g/3 oz yellow split peas
-
600ml/1 pt water
-
5 dried red chilies
-
4 green chilies, chopped
-
2.5ml/1/2 tsp asafoetida
-
1 onion, finely chopped
-
2.5ml/1 in ginger root, grated
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

salt
-
oil for frying
Method:
-
Soak the lentils, split beans
and split beans in the water for 2 hours then grind
to a coarse batter with the red chilies.

Add the
green chilies, asafoetida, onion, ginger and
coriander.
-
Take a ladleful of dough on the
palm of your left hand and flatten it with your
right hand.
-
Make a hole in the centre, slip the
dough into hot oil and fry until browned and crisp.
Drain on kitchen paper and serve hot with chutney.
