Snacks Recipes - Masala Vadas

Ingredients

  • 75g/3 oz red lentils

  • 75g/3 oz split black beans

  • 75g/3 oz yellow split peas

  • 600ml/1 pt water

  • 5 dried red chilies

  • 4 green chilies, chopped

  • 2.5ml/1/2 tsp asafoetida

  • 1 onion, finely chopped

  • 2.5ml/1 in ginger root, grated

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • salt

  • oil for frying


Method:

  1. Soak the lentils, split beans and split beans in the water for 2 hours then grind to a coarse batter with the red chilies.

  2. Add the green chilies, asafoetida, onion, ginger and coriander.

  3. Take a ladleful of dough on the palm of your left hand and flatten it with your right hand.

  4. Make a hole in the centre, slip the dough into hot oil and fry until browned and crisp. Drain on kitchen paper and serve hot with chutney.
