Ingredients

60ml/4 tbsp oil
-
large pinch of asafoetida
-
2.5ml/1/2 tsp mustard seeds
-
1.5cm/1/4 in ginger root,
finely chopped
-
1 onion, finely chopped
-
1 medium potato, chopped
-
100g/4 oz rice flakes
-
2.5ml/1/2 tsp garam masala
-
2.5ml/1/2 tsp ground red chili
-
2.5ml/1/2 tsp ground turmeric
-
salt
-
60ml/4 tbsp desiccated
(shredded) coconut
-
100g/4 oz peas
-
30ml/2 tbsp lemon juice
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

1 green chili, chopped
Method:
-
Heat the oil and fry the
asafoetida and mustard seeds until they start
crackling. Add the ginger, onion and potato and fry
until golden brown. Stir in the rice flakes, ground
spices, salt and coconut and cook for 5 minutes.

Stir in the peas and cook for
about 5 minutes until tender. Add the lemon juice,
coriander and chili and serve hot with a meal or at
tea with chutney.
