Snacks Recipes - Mysore Vadas

Ingredients

  • 50g/2 oz rice flour

  • 50g/2 oz semolina

  • 50g/2 oz plain (all-purpose) flour

  • 45ml/3 tbsp melted ghee

  • 4 green chilies, chopped

  • 1 onions, chopped

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • 2.5ml/1/2 tsp asafoetida

  • salt

  • water

  • oil for frying


Method:

  1. Mix together all the ingredients except the oil, adding enough water to make a stiff dough.

  2. Take a ladleful of dough on the palm of your left hand and flatten it with your right hand.

  3. Make a hole in the centre, slip the dough into hot oil and fry until browned and crisp. Drain on kitchen paper and serve hot with chutney.
