Onions Pakoras
Ingredients

pinch of bicarbonate of soda
(baking soda)

10ml/2 tsp ghee
-
100g/4 oz gram flour
-
50g/2 oz rice flour
-
30ml/2 tbsp ghee
-
3 onions, finely chopped
-
1 potato, finely chopped
-
2.5cm/1 in ginger root, finely
chopped
-
3 green chilies, chopped
-
5ml/1 tsp chili powder
-
1 bunch fresh coriander
(cilantro), chopped
-
salt
-
oil for deep-frying
Method:
-
Mix the soda with the ghee
until frothy then add all the remaining ingredients
and mix to a stiff batter, adding a little water.
-
Heat the oil and drop spoonfuls of the batter into
the oil and fry until golden. Drain on kitchen paper
and serve hot with tomato ketchup or chutney.
