Snacks Recipes - Onions Pakoras

Ingredients

  • pinch of bicarbonate of soda (baking soda)

  • 10ml/2 tsp ghee

  • 100g/4 oz gram flour

  • 50g/2 oz rice flour

  • 30ml/2 tbsp ghee

  • 3 onions, finely chopped

  • 1 potato, finely chopped

  • 2.5cm/1 in ginger root, finely chopped

  • 3 green chilies, chopped

  • 5ml/1 tsp chili powder

  • 1 bunch fresh coriander (cilantro), chopped

  • salt

  • oil for deep-frying


Method:

  1. Mix the soda with the ghee until frothy then add all the remaining ingredients and mix to a stiff batter, adding a little water.

  2. Heat the oil and drop spoonfuls of the batter into the oil and fry until golden. Drain on kitchen paper and serve hot with tomato ketchup or chutney.
