Onions and Spinach Pakoras
Ingredients
Batter
-
250g/9 oz gram flour, sifted
-
15ml/1 tbsp oil
-
30ml/2 tbsp chopped fresh
coriander (cilantro)

15ml/1 tbsp dried pomegranate
seeds
-
5ml/1 tsp garam masala
-
5ml/1 tsp ground red chili
-
5ml/1 tsp ground roasted cumin
-
5ml/1 tsp oregano seeds
-
1 small green chili, chopped
-
salt to taste
-
lukewarm water
Vegetables
-
1 medium onion, thinly sliced
-
50g/2 oz spinach, chopped
-
oil for deep-frying
Method:
-
Place the flour in a bowl and
rub in the oil. Mix in the spices then gradually
blend in the water to make a thick batter. Stir the
onion and spinach into the batter. Heat the oil over
a medium heat.

Place tablespoonfuls of the
mixture into the hot oil, 7 or 8 at a time and fry
until golden brown on all sides, pressing and
turning them over until cooked. Serve hot at tea
with chutney and barfi.
