Snacks Recipes - Onions and Spinach Pakoras

Ingredients

Batter

  • 250g/9 oz gram flour, sifted

  • 15ml/1 tbsp oil

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • 15ml/1 tbsp dried pomegranate seeds

  • 5ml/1 tsp garam masala

  • 5ml/1 tsp ground red chili

  • 5ml/1 tsp ground roasted cumin

  • 5ml/1 tsp oregano seeds

  • 1 small green chili, chopped

  • salt to taste

  • lukewarm water

Vegetables

  • 1 medium onion, thinly sliced

  • 50g/2 oz spinach, chopped

  • oil for deep-frying


Method:

  1. Place the flour in a bowl and rub in the oil. Mix in the spices then gradually blend in the water to make a thick batter. Stir the onion and spinach into the batter. Heat the oil over a medium heat.

  2. Place tablespoonfuls of the mixture into the hot oil, 7 or 8 at a time and fry until golden brown on all sides, pressing and turning them over until cooked. Serve hot at tea with chutney and barfi.
