Snacks Recipes - Paneer Pakoras

Ingredients

  • 3 large cloves garlic

  • 2.5ml/1 in ginger root

  • 1 green chili

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 5ml/1 tsp garam masala

  • 5ml/1 tsp oregano seeds

  • salt

  • 2 quantities paneer, cut into 16 pieces

Batter

  • 50g/2 oz gram flour, sifted

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • 7.5ml/1 1/2 tbsp oil

  • 2.5ml/1/2 tsp garam masala

  • 1.5ml/1/4 tsp ground red chili

  • 75ml/5 tbsp lukewarm water

  • oil for deep-frying


Method:

  1. Blend the garlic, ginger, chili, coriander, garam masala, oregano seeds and salt to a smooth paste in a blender or food processor.

  2. Rub the mixture over the paneer and leave for 30 minutes to marinate. Place the flour in a bowl and rub in the oil. Add the remaining batter ingredients then work in the water to make a smooth, runny batter.

  3. Heat the oil in a deep frying pan (skillet) over a medium heat. Dip the marinated pakora in the batter then place it in the hot oil.

  4. Fry about 8 pakora together, turning them over until golden brown. Serve hot with chutney as a starter or tea dish.
