Ingredients

225g/8 oz plain (all-purpose)
flour
-
5ml/1 tbsp lemon juice
-
5ml/1 tsp ajwain

120ml/4 fl oz lukewarm water
-
large pinch of salt
-
oil for frying

15ml/1 tbsp natural (plain)
yoghurt, whisked
-
5ml/1 tsp tamarind chutney
-
garam masala
-
ground red chili
-
ground roasted cumin
Method:
-
Place 200g/7 oz of flour in a
bowl and mix in the remaining ingredients to form a
soft dough. Knead for 5 minutes until springy and
satiny. Cover and leave for 30minutes.

Divide the dough into 24 equal
portions. Roll them into balls, flatten them then
roll them into circles on an oiled board. Smear the
top with oil, sprinkle with flour and fold in half.

Smear the top again with oil
and sprinkle with flour and fold again. Then roll
out thinly to a triangle shape of about 5mm/1/4 in
thick.

Heat the oil and fry a few
papri at a time until golden brown and crispy,
turning frequently while cooking. Spoon over the
yoghurt and chutney, sprinkle with garam masala,
chili and cumin and serve hot.
