Peanut Uppuma
Ingredients

15ml/1 tbsp oil or ghee
-
2.5ml/1/2 tsp mustard seeds
-
4 green chilies, chopped
-
1 onion, sliced
-
5ml/1 tsp ground turmeric
-
pinch of asafoetida
-
25g/1 oz desiccated (shredded)
coconut
-
350g/12 oz peanuts, chopped
-
salt
-
15ml/1 tbsp chopped fresh
coriander (cilantro)
Method:
-
Heat the oil and fry the
mustard seeds until they start crackling. Add the
chilies, onion, turmeric and asafoetida and fry
until browned.
-
Add the coconut and peanuts, cover
and cook for 5 minutes. Remove the lid and cook,
stirring, until the mixture is soft and cooked
through. Serve sprinkled with coriander.
