Potato Bondas
Ingredients

450g/1 lb potatoes
-
45ml/3 tbsp oil
-
2.5ml/1/2 tsp mustard seeds
-
15ml/1 tbsp split black beans
-
50g/2 oz cashew nuts, chopped

1.5ml/1/4 tsp ground turmeric
-
2 onions, chopped
-
6 green chilies, chopped
-
2.5cm/1 in ginger root, grated
-
1 spring fresh curry leaves
-
salt
-
juice of 1/2 lemon
-
225g/8 oz gram flour
-
5ml/1 tsp chili powder
-
2.5ml/1/2 tsp salt
-
150ml/1/4 pt water
-
oil for deep-frying
Method:

Boil the potatoes then drain
and dice. Heat the oil and fry the mustard seeds
until they start crackling. Add the split beans and
nuts and fry until golden.

Add the turmeric, onions,
chilies, ginger and curry leaves and cook until
soft. Add the turmeric, onions, chilies, ginger and

Add the potatoes and salt and
fry for 2 minutes, stirring. Add the lemon juice and
stir well. Shape the mixture into small balls. Mix
the flour, chili powder and salt then add enough
water to make a thick batter.

Heat the oil. Dip the
potato balls in the batter then fry a few at a time
in the hot oil until golden. Drain on kitchen paper
and serve with chutney.
