Snacks Recipes - Potato Dosas

Ingredients

  • 100g/4 oz rice flour

  • 2 large potatoes, boiled and mashed

  • 120ml/4 fl oz natural (plain) yoghurt

  • 2 green chilies, chopped

  • 45ml/3 tbsp chopped fresh coriander (cilantro)

  • salt

  • oil for frying


Method:

  1. Mix together all the ingredients except the oil and add just enough water to make a batter of pouring consistency.

  2. Heat a heavy-based pan and smear with oil. Pour a ladleful of batter into the pan and spread to a 15cm/6 in circle.

  3. Pour a spoonful of oil around the edges and cook for about 2 minutes until each side is golden. Serve hot with coconut chutney.
