Potato Pakoras
Ingredients
-
225g/8 oz gram flour
-
pinch of bicarbonate of soda
(baking soda)
-
300ml/1/2 pt water
-
salt
-
4 green chilies, chopped
-
10ml/2 tsp pomegranate seeds,
crushed
-
15ml/1 tbsp fenugreek leaves,
chopped (optional)
-
oil for deep-frying

450g/1 lb potatoes, boiled and
chopped
Method:
-
Mix the flour, bicarbonate of
soda and water to a batter. Add the salt, chilies,
pomegranate seeds and fenugreek, if using.

Whisk
thoroughly then leave to stand for 10 minutes. Heat
the oil to smoking point.

Dip the potato pieces in
the batter then slide into the hot oil a few at a
time and fry until golden. Drain on kitchen paper
and serve hot with chutney.
