Snacks Recipes - Potato Vadas

Ingredients

  • 4 potatoes, boiled and mashed

  • 50g/2 oz gram flour

  • 25g/1 oz rice flour

  • 6 green chilies, finely chopped

  • 1cm/1/2 in ginger root, finely chopped

  • 2.5ml/1/2 tsp asafoetida

  • 2-3 curry leaves, chopped

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • 10ml/2 tsp oil

  • 5ml/1 tsp mustard seeds

  • oil for frying


Method:

  1. Mix together the potatoes, flours, chilies, ginger asafoetida, curry leaves and coriander.

  2. Heat the oil and fry the mustard seeds until they start crackling. Pour into the potato mixture and mix well to a stiff dough.

  3. Take a ladleful of dough on the palm of your left hand and flatten it with your right hand.

  4. Make a hole in the centre, slip the dough into hot oil and fry until browned and crisp. Drain on kitchen paper and serve hot with chutney.
