Snacks Recipes - Red Lentil Dosas

Ingredients

  • 50g.2 oz split black beans

  • 50g/2 oz red lentils

  • 50g/2 oz yellow split peas

  • 100g/4 oz long-grain rice

  • 450ml/1/2 pt water

  • 60ml/4 tbsp grated (shredded) coconut

  • 1 onion, finely chopped

  • 2.5ml/1/2 tsp asafoetida

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • salt

  • oil for frying


Method:

  1. Soak the split beans, lentils, peas and rice in the water for 2 hours. Grind coarsely. Stir in the coconut, onion, asafoetida, coriander and salt and mix to a smooth batter.

  2. Heat a heavy-based pan and smear with oil. Pour a ladleful of batter into the pan and spread to a 15cm/6 in circle.

  3. Pour a spoonful of oil around the edges and cook for about 2 minutes until each side is golden. Serve hot with coconut chutney.
