Red Lentil
Dosas
Ingredients

50g.2 oz split black beans
-
50g/2 oz red lentils
-
50g/2 oz yellow split peas
-
100g/4 oz long-grain rice
-
450ml/1/2 pt water
-
60ml/4 tbsp grated (shredded)
coconut
-
1 onion, finely chopped
-
2.5ml/1/2 tsp asafoetida
-
30ml/2 tbsp chopped fresh
coriander (cilantro)
-
salt
-
oil for frying
Method:
-
Soak the split beans, lentils,
peas and rice in the water for 2 hours. Grind
coarsely. Stir in the coconut, onion, asafoetida,
coriander and salt and mix to a smooth batter.

Heat a heavy-based pan and
smear with oil. Pour a ladleful of batter into the
pan and spread to a 15cm/6 in circle.

Pour a
spoonful of oil around the edges and cook for about
2 minutes until each side is golden. Serve hot with
coconut chutney.
