Place the flour and salt in
bowl and rub in the margarine. Add the ajwain and
water and mix to a dough. Knead for 5 minutes until
satiny and spongy. Cover and leave for 30 minutes.
Heat the oil in a deep pan.
Roll the dough into a ball then roll out to 5mm/1/4
in thick. Cut through the circle in parallel lines
about 1.5cm/1/2 in apart then cut at right angles in
the same way to form diamond shapes.
Fry in the hot
oil until golden brown. Serve hot or cold at tea
with barfi, rasgulla or any sweet.
