Snacks Recipes - Sago Vadas

Ingredients

  • 50g/2 oz sago

  • 120m/4 fl oz buttermilk

  • 50g/2 oz gram flour

  • 5ml/1 tsp chili powder

  • 2.5ml/1/2 tsp asafoetida

  • 2 green chilies, chopped

  • 30ml/2 tbsp chopped fresh coriander (cilantro)

  • 5ml/1 tsp ghee

  • salt

  • oil for frying


Method:

  1. Soak the sago in the buttermilk for 1 hour. Stir in the flour, chili powder, asafoetida, chilies, coriander and ghee to make a stiff dough.

  2. Take a ladleful of dough on the palm of your left hand and flatten it with your right hand.

  3. Make a hole in the centre, slip the dough into hot oil and fry until browned and crisp. Drain on kitchen paper and serve hot with chutney.
