Dosas
Ingredients

100g/4 oz plain (all-purpose)
flour
-
100g/4 oz semolina
-
100g/4 oz rice flour
-
10ml/2 tsp cumin seeds
-
3 green chilies, chopped
-
250ml/8 fl oz natural (plain)
yoghurt
-
salt
-
30ml/2 tbsp chopped fresh
coriander (cilantro)
-
2-3 curry leaves, chopped
-
120ml/4 fl oz water
-
oil for frying
Method:
-
Mix the flours, cumin seeds,
chilies, yoghurt, salt, coriander and curry leaves.
Stir in just enough water to make a stiff dough,
cover and leave to stand for 2 hours.

Add more water
to the dough and mix to a thin, pouring consistency.

Heat a heavy-based pan and
smear with oil. Pour a ladleful of batter into the
pan and spread to a 15cm/6 in circle.

Pour a
spoonful of oil around the edges and cook for about
2 minutes until each side is golden. Serve hot with
coconut chutney.
