Snacks Recipes - Semolina Vadas

Ingredients

  • 100g/4 oz grated (shredded) coconut

  • 4 green chilies, finely chopped

  • 1cm/1/2 in ginger root, grated

  • 2.5ml/1/2 tsp sugar

  • 5ml/1 tsp cumin seeds

  • 200g/7 oz semolina

  • 15ml/1 tbsp natural (plain) yoghurt

  • 120ml/4 fl oz water

  • oil for frying


Method:

  1. Mix together all the ingredients, adding just enough water to make a batter of thick dropping consistency. Heat a heavy-based pan and smear with a little oil.

  2. Pour a ladleful of batter into the pan and spread as thinly as possible. Make a hole in the centre and pour in a teaspoon of oil.

  3. Cook until golden brown on the underside then turn over and fry until golden and crisp. Drain on kitchen paper and serve hot with chutney.
