Snacks Recipes - Sundal

Ingredients

  • 175g/6 oz chick peas (garbanzos), soaked overnight

  • 10ml/2 tbsp oil

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp split black beans

  • 1 dried red chili, halved

  • 2.5ml/1/2 tsp asafoetida

  • 30ml/2 tbsp grated (shredded) coconut

  • 1/2 mango, chopped

  • 1 green chili, chopped

  • juice of 1 lemon

  • salt


Method:

  1. Cook the chick peas in boiling water for about 1 hour until tender then drain.

  2. Heat the oil and fry the mustard seeds, split beans, chili and asafoetida until the seeds start crackling.

  3. Add the remaining ingredients and simmer for 2 minutes, stirring. Serve hot or cold.
