Sweet and Sour Pakoras
Ingredients
-
225g/8 oz gram flour
-
300ml/1/2 pt water
-
2.5ml/1/2 tsp salt
-
1 green chili, chopped
-
pinch of bicarbonate of soda
(baking soda)
-
ghee or oil for deep-frying
-
150ml/1/4 pt natural (plain)
yoghurt
-
5ml/1 tsp garam masala
-
5ml/1 tsp tamarind concentrate
Method:
-
Place the flour in a bowl and
gradually mix in enough water to make a medium-thick
batter. Stir in the salt, chili and bicarbonate of
soda.

Heat the ghee or oil and drop spoonfuls of the
batter into the oil and fry until golden.

Remove and drain on kitchen
paper then soak in warm water for 10 minutes.
-
Squeeze out the pakoras then mix into the yoghurt
with the garam masala and tamarind.
