Place the flour in a bowl and
rub in the oil. Mix in the spices then gradually
blend in the water to make a thick batter. Dip the
vegetables into the batter. Heat the oil over a
medium heat.
Place the battered vegetable
strips into the hot oil, a few at time and fry until
golden brown on all sides, pressing and turning them
over until cooked. Serve hot at tea with chutney and
barfi.
