Snacks Recipes - Vegetable Rava Uppuma

Ingredients

  • 100g/4 oz semolina

  • 45ml/3 tbsp ghee

  • 5ml/1 tsp mustard seeds

  • 5ml.1 tsp cumin seeds

  • 5ml/1 tsp split black beans

  • 5ml/1 tsp yellow split peas

  • 2.5ml/1/2 tsp asafoetida

  • 1 dried red chili, halved

  • 2-3 curry leaves

  • 2 onions, chopped

  • 1 potato, chopped

  • 1 green (bell) pepper, chopped

  • 1 carrot, chopped

  • 2.5ml/1 tsp ground turmeric

  • salt

  • 750ml/1 1/4 pts water

  • juice of 1 lemon

  • 15ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Dry roast the semolina until lightly browned then set aside. Heat the ghee and fry the mustard and cumin seeds, split beans, split peas, asafoetida, chili and curry leaves until the mustard seeds start crackling.

  2. Add the onions, ginger and chilies and fry for 2 minutes. Add the vegetables, turmeric and salt and fry for 1 minute.

  3. Add the water, bring to the boil, cover and simmer gently until the vegetables are tender. Gradually add the semolina, stirring carefully.

  4. Simmer until the water has been absorbed. Add the lemon juice and stir in the coriander before serving.
