Vegetable Rava Uppuma
Ingredients
100g/4 oz semolina
45ml/3 tbsp ghee
5ml/1 tsp mustard seeds
5ml.1 tsp cumin seeds
5ml/1 tsp split black beans
5ml/1 tsp yellow split peas
2.5ml/1/2 tsp asafoetida
1 dried red chili, halved
2-3 curry leaves
2 onions, chopped
1 potato, chopped
1 green (bell) pepper, chopped
1 carrot, chopped
2.5ml/1 tsp ground turmeric
salt
750ml/1 1/4 pts water
juice of 1 lemon
15ml/1 tbsp chopped fresh
coriander (cilantro)
Method:
Dry roast the semolina until
lightly browned then set aside. Heat the ghee and
fry the mustard and cumin seeds, split beans, split
peas, asafoetida, chili and curry leaves until the
mustard seeds start crackling.
Add the onions,
ginger and chilies and fry for 2 minutes. Add the
vegetables, turmeric and salt and fry for 1 minute.
Add the water, bring to the
boil, cover and simmer gently until the vegetables
are tender. Gradually add the semolina, stirring
carefully.
Simmer until the water has been absorbed.
Add the lemon juice and stir in the coriander before
serving.
