Snacks Recipes - Yoghurt Vadas

Ingredients

  • 175g/6 oz split black beans

  • 450ml/3/4 pt water

  • 8 green chilies

  • salt

  • 45ml/3 tbsp grated (shredded) coconut

  • 5ml/1 tsp cumin seeds

  • 1l/1 3/4 pts natural (plain) yoghurt

  • 10ml/2 tsp oil

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp cumin seeds

  • 1 dried red chili, halved

  • 5ml/1 tsp split black beans

  • 2.5ml/1/2 tsp asafoetida

  • 2-3 curry leaves


Method:

  1. Soak the split beans in the water for 2 hours. Grind to a fine paste with 4 chilies and salt. Grind the coconut, remaining chilies and cumin seeds to a paste then stir it into the yoghurt.

  2. Heat the oil and fry the remaining ingredients until the seeds start crackling. Stir into the yoghurt.

  3. Take a ladleful of dough on the palm of your left hand and flatten it with your right hand. Make a hole in the centre, slip the dough into hot oil and fry until browned and crisp.

  4. Drain on kitchen paper and pour over the yoghurt mixture before serving.
