Salads and Salads Dressings Recipes - Bean Salad

Ingredients

  • 150ml/1/4 pt wine vinegar

  • 2.5ml/1/2 tsp sugar

  • 2.5ml/1/2 tsp salt

  • 2 onions, sliced into rings

  • 100g/4 oz chick peas (garbanzos), soaked overnight

  • 100g/4 oz red kidney beans, soaked overnight

  • 225g/8 oz French beans, chopped

  • 1 green (bell) pepper, finely chopped

  • 30ml/2 tbsp Basic Salad Dressing

  • 2-3 lettuce leaves


Method:

  1. Place the wine vinegar in a bowl and stir in the sugar and salt. Add the onion rings and leave to soak for 6-8 hours, by which time they should have turned a delicate pink.

  2. Drain the chick peas and kidney beans, place in separate pans and cover with cold water. Bring to the boil and boil rapidly for 10 minutes then cover and simmer for about 1 hour until tender. Cook the French Beans in boiling water for about 10 minutes until tender. Drain and refresh under cold water.

  3. Drain all the ingredients and mix with the pepper. Pour over enough dressing to coat the beans and toss together well and chili for 2 hours. Just before serving, line a bowl with the lettuce and fill with the salad. Sprinkle with a little more dressing before serving.
