Broccoli Salad with Mushrooms
Ingredients

1.2l/2 pts water
-
675g/1 1/2 broccoli florets
-
60ml/4 tbsp oil
-
2.5cm/1 in ginger root, thinly
sliced
-
100g/4 oz mushrooms
-
pinch of chili powder
-
10ml/2 tsp mustard seeds,
crushed
-
6 cloves garlic, crushed
-
30ml/2 tbsp lemon juice
-
100g/4 oz cherry tomatoes
-
30ml/2 tbsp clear honey
Method:
-
Bring the water to the boil,
add the broccoli and boil for 1 minute. Drain well.
Heat the oil and fry the ginger and mushrooms for 3
minutes. Add the broccoli, chili powder and mustard
seeds and fry for 1 minute, stirring.

Remove from the pan and leave
to cool. Mix together the garlic, lemon juice,
tomatoes and honey. Stir in the broccoli mixture and
chili for 30 minutes before serving.
