Chick Pea and Green Tomato Salad
Ingredients

175g/6 oz chick peas
(garbanzos), soaked overnight in 450ml/3/4 pts water
-
2.5ml/1/2 tsp ground cumin
-
pinch of asafoetida
-
2.5ml/1/2 tsp garlic powder
-
2.5ml/1/2 tsp chili powder
-
5ml/1 tsp grated ginger root
-
8-10 small green tomatoes,
coarsely chopped
-
75ml/5 tbsp wine vinegar
-
45ml/3 tbsp clear honey
Method:

Put the chick peas and soaking
water, 175ml/6 fl oz water, the cumin, asafoetida,
garlic, chili powder and ginger in a large pan and
bring to the boil. Cover and simmer for about 2
hours until the chick peas are tender.

Mix together the tomatoes, wine
vinegar and honey and leave to marinate for 30
minutes. Drain the chick peas and spoon into a
serving bowl. Drain the tomatoes and stir into the
chick peas. Leave to cool and serve at room
temperature or chili before serving.
