Cracked Wheat Salad
Ingredients

175g/6 oz cracked wheat
-
15ml/1 tbsp wine vinegar

15ml/1 tbsp lemon juice
-
10ml/2 tsp clear honey
-
1 cucumber, thinly sliced
-
12 cherry tomatoes
-
225g/8 oz spinach, cut into
strips
-
225g/8 oz lettuce, cut into
strips
-
45ml/3 tbsp groundnut (peanut)
oil
-
2.5ml/1/2 tsp black pepper
-
10ml/2 tsp grated ginger root
-
15ml/1 tbsp sesame seeds
-
5ml/1 tsp paprika
Method:

Cover the wheat with water and
leave to soak for 1 hour. Mix together the wine
vinegar, lemon juice and honey, add the cucumber and
tomatoes and leave to marinate for 15 minutes.
Remove the cucumber and tomatoes and set aside.

Toss the spinach and lettuce
with 15ml/1 tbsp of oil then add to the wine vinegar
marinade and toss with pepper. Drain the wheat in a
colander lined with muslim (cheese cloth) and
squeeze out excess water.

Heat the remaining oil and fry
the ginger for 30m seconds. Add the wheat, sesame
seeds and paprika and fry for 2-3 minutes, stirring.
Leave to cool for a few minutes.

Arrange the greens
on a serving plate and spoon the wheat into a mound
on the top. Arrange the cucumber and tomatoes
attractively around the edge and garnish with a
little paprika. Serve at room temperature. Serve at
room temperature or chilled.
