Salads and Salads Dressings Recipes - Cucumber Salad

Ingredients

  • 30ml/2 tbsp green lentils

  • 1 cucumber, peeled and finely chopped

  • 30-45ml/3-4 tbsp grated (shredded) coconut

  • 1 large green chili, finely chopped

  • 1 small bunch fresh coriander (cilantro), chopped

  • 15ml/1 tbsp lemon juice

  • salt

  • 10ml/2 tsp oil

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp cumin seeds

  • 5ml/1 tsp split black beans

  • 5ml/1 tsp yellow split peas

  • 2.5ml/1/2 tsp asafoetida

  • 1 dried red chili, halved

  • 2-3 curry leaves


Method:

  1. Soak the green lentils in water for 1 hour. Mix together the cucumber, coconut, green chili, coriander, lemon juice and salt. Drain the lentils and stir them in.

  2. Heat the oil and fry all the remaining ingredients until the mustard seeds start crackling. Add to the salad and mix well. Serve chilled or at room temperature.
