Salads and Salads Dressings Recipes - Mix Salad with Moong Beans

Ingredients

  • 100g/4 oz moong beans, soaked for 12 hours

  • 3 onions, thinly sliced

  • 90ml/6 tbsp lemon juice

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 2.5ml/1/2 tsp black pepper

  • 1 green (bell) pepper, cut into rings

  • 3 tomatoes, sliced

  • 4 green chilies, halved and seeded

  • 10 radishes, trimmed


Method:

  1. Rinse the soaked beans thoroughly then place in a bowl and cover with a damp cloth. Leave to stand for 12 hours. Sprinkle the cloth with water and leave to stand for a further 24 hours until the bens have sprouted and swollen.

  2. Mix the beans with the lemon juice, coriander and pepper. Arrange the onions on a serving dish and sprinkle with half the beans.

  3. Arrange the pepper and tomato slices alternately over the top and sprinkle with the remaining beans. Serve garnished with the chilies and radishes.
