Ingredients

  • 2 onion, finely chopped

  • 2 boiled potatoes, cubed

  • 2 tomatoes, chopped

  • 2 hard-boiled (hard-cooked) eggs, chopped

  • 1 cucumber, peeled and cubed

  • 100g/4 oz sprouted green lentils

  • 100g/4 oz cottage cheese

  • juice of 1 lime

  • salt and pepper

  • 30ml/2 tbsp oil

  • 100g/4 oz roasted peanuts, ground

  • 30ml/2 tbsp sugar

  • juice and grated rind of 1 lime

  • 250ml/8 fl oz water


Method:

  1. Mix together the onion, potatoes, tomatoes, eggs, cucumber, lentils and cottage cheese. Sprinkle with the lime juice, season with salt and pepper and toss well. Chill.

  2. Heat the oil and stir in the peanuts, sugar and lime rind and juice. Cook for a few minutes, stirring, until the mixture thickens slightly. Adjust the seasoning to taste. Pour over the salad and toss before serving.
