Ingredients

  • 1 medium chicken

  • 1 bay leave

  • 4 large boiled potatoes, cubed

  • juice of 1/2 lime

  • 1 green (bell) pepper, cut into strips

  • 1 green chili, chopped

  • 45ml/3 tbsp finely shredded cabbage

  • 300ml/1/2 pt mayonnaise

  • salt and pepper

  • 175g/6 oz walnut halves

  • 5-6 lettuce leaves


Method:

  1. Place the chicken in a heavy-based pan and fill with water to come half way up the leg. Add the bay leave, bring to the boil, cover and simmer for about 1 1/2 hours until the chicken is tender. Drain and leave to cool. Remove the meat and shred to cube it.

  2. Put the potatoes into a bowl and toss in the lime juice. Stir in the chicken and all the remaining ingredients except the walnuts and lettuce. Just before serving, arrange the leaves on a serving place, stir the walnuts into the salad and pile on top of the lettuce.
