Nutty Chicken Salad
Ingredients

1 medium chicken
-
1 bay leave
-
4 large boiled potatoes, cubed
-
juice of 1/2 lime
-
1 green (bell) pepper, cut into
strips
-
1 green chili, chopped
-
45ml/3 tbsp finely shredded
cabbage
-
300ml/1/2 pt mayonnaise
-
salt and pepper
-
175g/6 oz walnut halves
-
5-6 lettuce leaves
Method:

Place the chicken in a
heavy-based pan and fill with water to come half way
up the leg. Add the bay leave, bring to the boil,
cover and simmer for about 1 1/2 hours until the
chicken is tender. Drain and leave to cool. Remove
the meat and shred to cube it.

Put the potatoes into a bowl
and toss in the lime juice. Stir in the chicken and
all the remaining ingredients except the walnuts and
lettuce. Just before serving, arrange the leaves on
a serving place, stir the walnuts into the salad and
pile on top of the lettuce.
