Sprouted Green Lentil Salad
Ingredients
275g/10 oz whole green lentils
2 small onions, chopped
salt and pepper
15-30ml/1/2 tbsp Basic Salad
Dressing
Method:
Wash and soak the lentils in
water for at least 6 hours, then drain, cover with a
damp cloth and keep in a dry, warm place for a
further 6-10 hours. The lentils should sprout.
Mix the sprouted lentils with
the onion, season with salt and pepper and toss with
the salad dressing.
