Vegetable Salad
Ingredients

1 carrot, finely chopped
-
1 cucumber, peeled and finely
chopped
-
1 tomato, finely chopped
-
1 green chili, finely chopped
-
1 small bunch fresh coriander
(cilantro), finely chopped
-
10ml/2 tsp oil
-
5ml/1 tsp mustard seeds
-
5ml/1 tsp cumin seeds
-
5ml/1 tsp split black beans
-
1 dried red chili, halved
-
2.5ml/1/2 tsp asafoetida
-
2-3 curry leaves
-
30ml/2 tbsp lemon juice
-
salt
Method:
-
Mix together the vegetables and
coriander. Heat the oil and fry the mustard and
cumin seeds, split bean, chili, asafoetida and curry
leaves until the mustard seeds start crackling.
-
Stir
them into the salad with the lemon juice and salt.
Serve cold or at room temperature.
