Ingredients

  • 1 carrot, finely chopped

  • 1 cucumber, peeled and finely chopped

  • 1 tomato, finely chopped

  • 1 green chili, finely chopped

  • 1 small bunch fresh coriander (cilantro), finely chopped

  • 10ml/2 tsp oil

  • 5ml/1 tsp mustard seeds

  • 5ml/1 tsp cumin seeds

  • 5ml/1 tsp split black beans

  • 1 dried red chili, halved

  • 2.5ml/1/2 tsp asafoetida

  • 2-3 curry leaves

  • 30ml/2 tbsp lemon juice

  • salt


Method:

  1. Mix together the vegetables and coriander. Heat the oil and fry the mustard and cumin seeds, split bean, chili, asafoetida and curry leaves until the mustard seeds start crackling.

  2. Stir them into the salad with the lemon juice and salt. Serve cold or at room temperature.
